I need to brag about this. Today, at yoga, it was particularly difficult. For one, I had just played a soccer game and was exhausted. The pad of my left foot was really hurting since that’s the foot I always push off with first. I had to do many of the poses on just one leg. The other problem was I was hungry.
Normally Yoga is about clearing your mind and about thinking about nothing. I have a hard enough time doing this as it is with so much going on in my life. Today I was hungry. This is the death knell of trying to do yoga – or any sport for that matter. When I was living in Switzerland I used to go running in the park near where I lived. I never made it past the kebab stand in the park. It always smelled so good, and rather than thinking about how much I didn’t like running I was always thinking about food (I was 25-30 pound heavier then). Whenever I would get near that kebab stand, I would break down.
Today in Yoga, I got an inspiration. I was thinking about how delicious my morning omelet was. Then I remembered the left over baby portebella mushrooms, and wasn’t quite sure what to do with them. So throughout yoga I was trying to think of something delicious to make with them. That’s when I came up with this:

Mushrooms and Brie
This was awesome. First I sauteed some shallots with butter and garlic. Then I added the mushrooms and walnuts, followed by rosemary (fresh from my porch), ground black pepper and some seas salt. I sauteed that all together. Then I warmed some brie in the oven until it was about to start losing it’s shape. The brie mixed with the mushroom mixture on bread (I tried both toasted and not toasted) was amazing. Amazing. It was so good (and very quick!). Words cannot describe. Everyone reading this living in Texas, I will make it for you. Everyone else, I may write down the recipe next time I do it. (I am not sure why the picture is sideways… sorry)
